vegan Chocolate french toast recipe

This easy Vegan French Toast recipe will get you feeling like you’re in a cute little Parisian cafe, overlooking a quiet street in summer. It is the next best thing to going to France and experiencing the je ne sais quoi and culture there. Who needs to travel to France when you can re-create the vibes at home? The idea for this recipe stemmed from wanting a change at breakfast. My partner and I are used to mainly eating oats be it cooked or soaked overnight when it was really hot here in the UK. Although I love oats and especially my chocolate porridge, sometimes it is nice to change things up a little bit and try new things.

As I am obsessed with chocolate, I made sure not to miss it in this recipe. We used a chocolate hazelnut paste inside and it tasted divine. It is almost like using Nutella on toast.

In this recipe we used wholegrain brown bread. The thing to be careful about is the fact that it can be quite thin and so once soaked just be wary as it could break apart. Do not exaggerate with soaking it. I will definitely be re-making this recipe with different types of bread too. And if you like your bread more hard or crunchy, feel free to use a different type of bread as this recipe is more sweet and fluffy.

The ingredients:

  • Your preferred type of bread (about 2-4 slices per portion depending on the size of the bread)
  • Plant milk (we used soya milk)
  • Cinnamon
  • Vanilla
  • Nutmeg (optional)
  • Ground Chia or Flaxseed
  • Oil
  • Fruit
  • Yoghurt/Maple syrup
  • Vegan chocolate spread

How to:

Start by preparing a small-medium bowl of milk with 1 tablespoon of ground chia or flaxseed. Let it rest for a few minutes whilst it soaks and gains a semi-glutinous texture. Add the remaining spices to the mixture and mix well.

Prepare a pan of oil of your choice (we used coconut oil to add more sweetness). Soak the slices of bread one by one and place them in a pan. Fry each side until it is golden and crispy. Set aside on a large plate when done.

Cut the slices diagonally if using standard toast bread and spread some vegan chocolate spread. Next, close the two slices to create a triangular sandwich. Add fruit slices like banana and strawberry and pour over with maple syrup or yoghurt to finish it off.
